The BEST Fried Rice EVER image

This comes from the friend that got my husband and I together. When I asked her for the recipe she said it's not so much of a recipe, it's kind of "some of this" and "a little of that." I love the fact you can make this to serve 1 or 100, great for large and small families alike. NOTE: you can put just about anything in it. It's really good topped with sweet and sour sauce.

Number Of Ingredients 9

FOR EACH SERVING, PER PERSON:
1 cup(s) rice
1 slice(s) bacon
2 tablespoon(s) onion
1 - egg
1 tablespoon(s) plus extra to taste soy sauce
2 teaspoon(s) sesame oil
1/2 cup(s) diced vegetables or use can use frozen mixed vegetables
MULTIPLY FOR HOW MANY PEOPLE YOU ARE SERVING

Steps:

  • Heat frying pan over medium heat.
  • Dice up raw bacon pretty small (1/4 inch "ribbons" across the slice. Add to pan and cook until crisp. DO NOT DRAIN GREASE.
  • Add sesame oil to bacon and fat in pan.
  • Add chopped regular onion, saute until transparent and begining to turn golden brown, OR add green onion. Saute for just a few moments until white parts become soft.
  • Lower heat a bit (just so things don't start to burn), and add vegetable. Stir fry until tender.
  • Whisk together soy sauce and egg.
  • Add cooked rice to pan, folding and stirring so rice mixes well with other ingredients.
  • Move rice mixture off to one side of pan, and slide pan so that side is slightly off heat.
  • Add egg to "clean" side of pan, stir to scramble a bit. Once egg has begun to set, move pan back over heat and mix egg into mixture. Season to taste with extra soy sauce. If you have it on hand you can add a little fresh ginger to the egg/soy mixture. Toasted sesame seeds are nice but not necessary.
