THAI PEANUT PASTA image

4 oz fettuccini
1/2 c carrot matchsticks
1/2 c peas
2 tbsp vinegar
2 tsp red pepper flakes
1 tsp hot sauce
2 tbsp oil
1 tsp soy sauce
1 tbsp orange juice concentrate
1 1/2 tbsp smooth peanut butter

Steps:

  • Cook pasta, drain, and set aside. Steam or microwave carrots and peas until tender. Combine vinegar, red pepper flakes, hot sauce, soy sauce, orange juice concentrate, and peanut butter. Cook over medium heat and stir until smooth, or microwave on high for 1 min. After cooking, whisk for a very smooth sauce. In a med bowl, combine pasta, veg, and sauce. Serve hot or cold.
