Texas Summer Salsa image

This is a salsa recipe that has bits of summer melons for a fruity touch. Prep time doesn't include chilling time as that can vary greatly.

1/2 small honeydew melon, seeded
1/2 small cantaloupe, seeded
1/3 large jalapeño pepper, seeded and diced
1/4 c fresh cilantro, chopped
2 Tbsp fresh lime juice
15 oz jar salsa
1 large bag totrtilla chips (scoops work well)

Steps:

  • 1. Finely chop the honeydew and cantaloupe. Place chopped fruit in a colander for 30 minutes to allow all excess liquid to drain.
  • 2. Add the chopped jalapeño and cilantro to the fruit, and stir until well combined.
  • 3. Mix salsa and lime juice together in a bowl. Add the fresh fruit mixture, and mix well with wooden spoon. Transfer to festive serving bowl if desired, and chill until ready to serve.
  • 4. When ready to serve, place salsa bowl in center of a large serving platter, and arrange tortilla chips around the salsa bowl.
