2 Cans Black Beans Rinsed
2 Cans Corn Rinsed
1 Can Green Chilies
1 Large Jalapeno Diced
1 Red Bell Pepper Diced
1 Green Bell Pepper Diced
1 Bunch of Cilantro Chopped
2/3 Cup Apple Cider Vinegar
1/3 Cup Olive Oil
3 TBS Red Wine Vinegar
1/3 Cup Sugar

Steps:

  • Combine Apple Cider Vinegar, Olive Oil, Red Wine Vinegar and Sugar in saucepan. Heat to dissolve sugar and set aside to cool. Combine all other ingredients in a LARGE bowl. Whisk and combine cooled dressing with salad. Marinate in refrigerator for as long as possible. Better the next day.
