Texas Caviar image

Full of fresh ingredients, vibrant colors and awesome flavors, this Texas Caviar is a crowd pleaser! This dip is a natural with tortilla chips but it can be used as a side dish or as a topping.

DIP
1 1/2 c orange peppers, seeded, membranes removed and finely chopped
1 1/2 c red peppers, seeded, membranes removed and finely chopped
3/4 c poblano peppers, seeded, membranes removed and finely chopped
1/4 c jalapeño peppers, seeded, membranes removed and finely chopped
1/2 c red onions, finely chopped
3/4 c roma tomatoes, seeded and finely chopped
1 can(s) (15 oz) black-eyed peas, rinsed and drained
1 can(s) (15 oz.) black beans, rinsed and drained
1 can(s) (15 oz.) corn kernels, drained
1 can(s) (4 oz.) diced green chiles
2 Tbsp fresh cilantro, finely chopped
LIME DRESSING
1/4 c grapeseed oil
1/4 c freshly squeezed lime juice
3 large cloves garlic, pressed
1 Tbsp agave nectar
1/2 tsp chipotle chili powder
1/2 tsp ground cumin
freshly ground black pepper, to taste (i always use mixed peppercorns)
ground himalayan sea salt, to taste

Steps:

  • 1. In a large bowl, combine all the ingredients except cilantro. In a small bowl, combine all the lime dressing ingredients; whisk until well blended. Pour dressing over pepper mixture, stir, cover and transfer to the fridge for at least 6 hours and up to 8 hours.
  • 2. Before serving, sprinkle fresh chopped cilantro and serve it with tortilla chips or use it as a side dish or as a topping. 12 servings
