Tex-Mex Tilapia image

This light, white fish is marinated with olive oil and lime juice and then pan-fried with tomatoes, jalapenos and cilantro until just done. It's quick, easy, and amazing!

4 (3 ounce) fresh tilapia fillets
¼ cup olive oil
¼ cup fresh lime juice
2 tomatoes, chopped
2 fresh jalapeno peppers, sliced into rings
8 sprigs cilantro leaves
salt and ground black pepper to taste

Steps:

  • Lay tilapia fillets in a glass baking dish. Drizzle olive oil and lime juice evenly over the fish. Season with salt and pepper. Allow to sit at room temperature for 1 hour.
  • Transfer tilapia to a non-stick skillet and pour the lime juice mixture over the fish. Scatter the tomatoes, jalapenos, and cilantro over the fillets. Cook over medium heat for about 4 minutes per side.
