Test Kitchen's Shrimp Scampi image

Number Of Ingredients 15

1 1/2 pounds jumbo shrimp
3 tablespoons kosher salt
2 tablespoons sugar
1 quart water
1 tablespoon oil
8 cloves fresh garlic, sliced
1 tablespoon olive oil
1/2 teaspoon red pepper flakes
1/4 pepper
3 tablespoons lemon juice
1 teaspoon cornstarch
4 tablespoons butter
1 tablespoon chopped Italian parsley
1 cup white wine
4 sprigs fresh thyme

Steps:

  • Peel and devein shrimp. Save shells. Brine 15 minutes in a solution of 1 qt. water plus 2 T. sugar and 3 T.kosher salt.
  • Saute shells in 1 T. oil. Add 1 cup white wine and 4 sprigs thyme. Simmer for 5 minutes. Drain stock, pressing shells.
  • Heat 1 T. oil. Add garlic cloves, pepper flakes and salt. Add stock, then shrimp and saute for 5 minutes (covered).
  • Removed shrimp and set aside.
  • Mix lemon juice with cornstarch and whisk into stock. Cook one minutes. Off heat, add butter, one T at a time. Stir in shrimp and add 1 T. chopped parsley.
