TEQUILA-JALAPENO SHRIMP image

Juice of 1 lime
2 Tbsp tequila
1 Tbsp vegetable oil
1/2 medium onion, chopped
Handful of cilantro
2 jalapeno peppers, chopped
1 clove garlic
Salt and black pepper
1 lb medium shrimp, peeled and deveined
Metal skewers, or wooden skewers soaked in water for 30 minutes

Steps:

  • * Preheat a grill or grill pan over high heat. Combine the lime juice, tequila, oil, onion, cilantro, jalapenos, garlic, and a few pinches of salt and pepper in a food processor. Pulse until the mix has the consistency of a pesto. * Thread the shrimp onto the skewers. Slather the shrimp with enough marinade to fully cover; let marinate for 15 minutes. * Grill the shrimp for 1 to 2 minutes per side, until pink and firm.
