a special blend of spices for cooking vegetable delicacies on a flat pan(tava).serve with roti and raita.

150 g okra
100 g small eggplants
2 medium red onions
100 g potatoes
1/2 teaspoon coriander powder
salt
1/2 teaspoon mango powder
1/2 teaspoon cumin powder
1/2 teaspoon red chile
1/4 teaspoon black salt
1/2 teaspoon dry mustard, green powder (methi)
1/2 teaspoon garam masala
1/4 teaspoon ground nutmeg
1/4 teaspoon ground mace
1/2 teaspoon dry ginger powder
2 1/2 tablespoons oil

Steps:

  • Dress and silt all vegetables.
  • Mix all ingredient and stuff in every piece of vegetable.
  • On tava or frying pan heat oil.
  • Gently place vegetables,silt upwards and simmer on flame.
  • Turn occasionally till tender.strain and serve hot.
