Steps:
- 1. In a mixing bowl, beat the sugar and eggs together until light and fluffy. Stir in the bananas, applesauce and vanilla. Combine the flours, baking soda and salt; stir into banana mixture just until moistened. Add nuts.
- 2. Pour into a loaf pan that has been sprayed with cooking spray. Bake at 325 degrees 60 to 75 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
