Taco Soup image

I'd never eaten Taco Soup until I joined Weight Watchers. This recipe was a favorite that was passed around at the meetings often. Very good and one the family will truly enjoy on a rainy day. Whenever making soup, I always use 93% lean ground beef.

1 lb ground beef, 93% lean
1 can(s) corn
1 can(s) rotel
1 can(s) diced tomatoes
1 pkg buttermilk ranch salad dressing mix
1 can(s) chili beans
1 can(s) black beans
1 pkg taco seasoning mix

Steps:

  • 1. Brown the ground beef and drain off grease. I use lean varieties or ground turkey.
  • 2. Once ground beef is browned combine all ingredients in stock pot and cook for at least 30 minutes. Do not drain any of the juice off of vegetables or beans. If you desire to "stretch" the recipe somewhat - add a cup of two of water.
  • 3. May also simmer this concoction in crock pot on low all day. Needs less water if you use the crock pot method.
  • 4. Serve with tortilla chips and shredded cheese of your choice.
