Taco Soup image

This is a quick and easy recipe to make after work. It fits in nicely with busy schedules. It can easily be doubled for big gatherings or for freezing. I always double the recipe for my family. I have six family members that will eat the whole pot! I hope you enjoy!

Number Of Ingredients 14

1 1/2 lb ground beef
14 1/2 oz can diced tomatoes
8 oz tomato sauce
1 can(s) diced tomatoes with green chilies (ex. rotel)
2 can(s) blue runner red beans cream style (not the large can)
1 can(s) whole kernel corn
1 pkg taco seasoning mix
1 can(s) beef broth
GARNISHES
sour cream
mexican blend shredded cheese
guacamole
salsa
tortilla chips

Steps:

  • 1. Brown ground meat in a skillet with chopped onions, then drain grease
  • 2. Put ground meat with onions in a soup pot and add all other ingredients, stir to combine, then bring to simmer and let cook at least 30 minutes to combine everything.
  • 3. Serve with optional garnishes and enjoy!
