Taco Salad image

Being disappointed with most of the taco salads I ordered in restaurants I began making my own at home. Always with fresh ingredients.

Number Of Ingredients 14

1 - 1-1/2 lb lean ground beef
1 pkg taco seasoning
1 can(s) black beans
1/4 c salsa
1 avocado
1 cucumber
1/4 c tortilla chips, crumbled
2 c mexican blend cheeses, shredded
1 small onion
1 can(s) black olives
1 pkg cherry tomatoes
1 bag of mixed salad greens
taco sauce or salsa for topping
sour cream for topping

Steps:

  • 1. In a large skillet brown the meat, drain off grease and return to skillet. Then add black beans juice and taco seasoning, stir and heat through.
  • 2. Peel cucumber, remove seeds and cut into small pieces.
  • 3. Wash all fresh vegetables and slice, dice or chop
  • 4. Build salads on dinner plates as desired using, meat and bean mixture, crumbles tortilla chips, vegetables, and cheeses.
  • 5. Drizzle each salad with taco sauce or salsa as desired and top with a dollop of sour cream
