Being disappointed with most of the taco salads I ordered in restaurants I began making my own at home. Always with fresh ingredients.

Steps:
- 1. In a large skillet brown the meat, drain off grease and return to skillet. Then add black beans juice and taco seasoning, stir and heat through.
- 2. Peel cucumber, remove seeds and cut into small pieces.
- 3. Wash all fresh vegetables and slice, dice or chop
- 4. Build salads on dinner plates as desired using, meat and bean mixture, crumbles tortilla chips, vegetables, and cheeses.
- 5. Drizzle each salad with taco sauce or salsa as desired and top with a dollop of sour cream
