- Scrub the potatoes, keep the skin on Boil the potatoes 8-10 minutes until potatoes are cooked but not too mushy. They can be firm, but cooked. Cool the potatoes Butter a an 8x11 baking dish Peel Potatoes and slice crosswise into medallions about 1.4" thick Mix brown sugar, salt and pepper into a small bowl Begin layering the baking dish with the sweet potato medallions. After first two layers begin sprinkling each layer with the brown sugar, salt and pepper mixture along with small chunks of butter. Repeat for each layer until the baking dish is full. This dish can be refrigerated. When ready to cook put into the oven directly from the refrigerator at 350 degrees for 1 hour. If starting at room temperature then only heat for about 40 minutes.
