Sweet Potato Pineapple Muffins image

Yield 12 muffins

Number Of Ingredients 12

LIQUID INGREDIENTS
3/4 cup mashed sweet potato
3/4 cup pineapple juice
1/2 cup crushed pineapple drained (save the juice)
2 tablespoons canola oil
2 tablespoons maple syrup
DRY INGREDIENTS
2 cups unbleached white flour
1 1/2 teaspoons ground ginger
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Preheat the oven to 350°F. Combine the liquid ingredients in a mixing bowl, and mix well. Sift the dry ingredients into the liquid ingredients, and stir well. Spoon into lightly oiled muffin tins, and bake for 20 minutes. Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
