Sweet Potato Pie image

I make at least 5 of these pies every yr at Thanksgiving & deliver to family...THEY LOVE THEM!! Ever since I found this recipe I have never made another pumpkin pie! ;^) I. personally do not like my pie saturated with spices. I need to taste the sweet potato. Only spice I use is cinnamon and I have never had 1 complaint! Trust...

4 Tbsp butter, softened
4 c mashed cooked sweet potatoes
2 c sugar
4 eggs
2 Tbsp all purpose flour
1 tsp salt
1/2 tsp baking soda
1 c buttermilk
2 tsp vanilla extract
2 unbaked, deep dish 9

Steps:

  • 1. Preheat oven to 350 degrees. Prepare sweet potatoes..(peel and boil till softened.) Rinse potatoes then mash. In a large bowl, mix the potatoes w/the butter & eggs. Mix well. Then in another bowl, mix the sugar, flour, salt & baking soda. Mix this w/potato mixture. Add the buttermilk & mix well. Stir in vanilla (batter will seem thin but that's ok) and pour into 2 (9-inch) piecrusts. I then sprinkle the top of the pies w/cinnamon. You can do this to your liking. Bake at 350 degrees for 1 hour & 10 minutes or until pies are set. *DON'T FORGET THE 'DOLLOP' OF WHIPPED CREME! :^) & ENJOY!!!
