This is a twist on regular hash-browns for breakfast. You can choose a different breakfast meat, if you like.

Steps:
- Peel and shred the sweet potato.
- Heat a cast iron (or other) pan over medium heat and swirl in the olive oil. Add shredded potatoes in a single layer, season with salt and pepper. Flip occasionally and cook until potato are browned. Cover and keep warm.
- Heat a frying pan over medium heat, add some butter. Lower heat and add eggs. Cover and let eggs cook until whites are set - a couple minutes.
- While eggs set, cook ham slice in another pan until warmed. Flip so both sides will get somewhat crispy.
- To serve - plate sweet potatoes, top with eggs. Serve ham on the side and sprinkle with parsley and sriracha, if desired.
