Sweet Potato Hash image

This is a twist on regular hash-browns for breakfast. You can choose a different breakfast meat, if you like.

Number Of Ingredients 8

1 tablespoon(s) olive oil
1 medium sweet potato
salt and pepper, to taste
2 eggs
4 ounce(s) slice of ham
butter, for pan
sriracha, to taste
parsley, for garnish

Steps:

  • Peel and shred the sweet potato.
  • Heat a cast iron (or other) pan over medium heat and swirl in the olive oil. Add shredded potatoes in a single layer, season with salt and pepper. Flip occasionally and cook until potato are browned. Cover and keep warm.
  • Heat a frying pan over medium heat, add some butter. Lower heat and add eggs. Cover and let eggs cook until whites are set - a couple minutes.
  • While eggs set, cook ham slice in another pan until warmed. Flip so both sides will get somewhat crispy.
  • To serve - plate sweet potatoes, top with eggs. Serve ham on the side and sprinkle with parsley and sriracha, if desired.
