Steps:
- Rub softened butter on the sweet potatoes. Bake whole potatoes until done. Peel potatoes and and mash. Season with sugar, butter, and lemon juice. Make croquettes by shaping potatoes around marshmallows. Chill one hour. Dip into egg and roll in cornflake and pecan mixture. Deep fry croquettes in oil at 375 degrees until golden brown.
