SWEET POTATO CORN JALAPENO SOUP image

Number Of Ingredients 7

1/4 c butter
1 small onion finely chopped
1 1/2 lb sweet potatoes, peeled and chopped
6 c. chicken stock
1 1/2 c fresh corn kernels or frozen thawed
2t finely chopped jalapeno (or more)
1/2 c whipping cream (optional)

Steps:

  • Melt butter, saute onion ~ 6 min. Add potatoes and broth and bring to a boil. Simmer ~30 min. Puree. Add corn and Jalapeno, simmer 5 min. Add cream and stir.
