Sweet Potato, Chickpea & Chorizo Hash image

From BBC goodfood shows I changed the measurements from metric and the quantities to amounts I could find here. And the procedures to what I prefer.

Number Of Ingredients 7

1 1/3 lbs sweet potatoes, diced
1 tablespoon olive oil
1 large red onion, thinly sliced then quartered
14 ounces chorizo sausage, skinned and crumbled
14 ounces chickpeas, drained
6 large eggs
1 green chili pepper, thinly sliced into rings

Steps:

  • Boil the diced sweet potatoes 8 minutes , until tender.
  • Heat the oil in a large cast iron skillet, cook the chorizo 5 minutes and onions stirring frequently untill onions are soft and chorizo is done.
  • Add the sweet potatoes and chickpeas cook to the degree of doneness you prefer. I like a crust.
  • With a spoon make depressions for the eggs. Put the eggs in the depressions.
  • Move the skillet to the broiler and broil on high until the whites are set. Sprinkle with chilli and serve.
