SWEET POTATO CASSEROLE WITH CARAMELIZED APPLES image

Number Of Ingredients 11

4 large sweet potato (or one super large can cooked)
2 Tblsp salted butter
2 Tblsp olive oil
2 Tblsp heavy cream (i screwed up and did 2 cups!)
1/2 cup applesauce
2 tsps grated fresh ginger
1 tsp lemon zest
1 tsp sea salt
1 tsp freshly ground black pepper
2 honey crisp or fuji apples, peeled, cored and sliced (could double this for better topping)
3 Tblsp light brown sugar

Steps:

  • preheat oven to 400 degrees grease 4 qt baking dish prick potatoes and wrap each on in foil; place on baking sheet and bake for one hr. turn off oven and let potatoes sit for 30 min remove from oven and cool for 30 min peel potatoes and scoop flesh into large bowl Add 1 Tblsp butter, 1 Tblsp olive oil and cream Beat w/mixer on medium high for 2 min til smooth mix in applesauce, giner, lemon zest, salt and pepper In bowl, combine apples and brown sugar. On med-high heat, melt 1 T butter and 1 T olive oil. add apples and saute, stirring occassionally, until caramelized and golden brown, about 15 min. top the sweet potatoes with apples. Bake 10-15 min til warmed thru.
