Sweet Potato Casserole image

Another delicious sweet potato casserole recipe.

Number Of Ingredients 11

3 large sweet potatoes or 1 (40 ounce ) can, drained
1 c sugar or 1/2 cup for canned sweet potatoes
2 eggs
1/2 c ( 1 stick) butter, softened
1 tsp vanilla
CRUNCH TOPPING
1/3 c melted butter
1/3 c flour
1 c brown sugar
1 c chopped pecans
1 Tbsp cinnamon

Steps:

  • 1. Boil sweet potatoes until tender. Remove skins when cooled or drain canned sweet potatoes well.
  • 2. Put into a large bowl and whip them until fluffy. Add remaining ingredients.
  • 3. Pour into a greased 9 X 13 inch casserole and top with the Crunch Topping.
  • 4. Bake at 350 degrees for 45 minutes.
