Round out a Tex-Mex meal with these dessert quesadillas, made with Bosc pears and cheddar with a fragrant touch of cinnamon.

- Heat oven to 375°F.
- Cook 2 Tbsp. butter and 1 Tbsp. sugar in large saucepan on medium heat 1 to 2 min. or until butter is melted and mixture is well blended, stirring occasionally. Stir in vanilla and 1/2 tsp. cinnamon. Add pears; mix lightly. Cook 5 to 7 min. or until pears are tender, stirring frequently. Remove from heat; set aside. Mix remaining sugar and cinnamon; set aside.
- Spoon pear mixture evenly onto bottom half of each of the tortillas; sprinkle with cheese. Fold tortillas in half. Melt remaining butter. Brush half of the butter evenly onto tops of quesadillas; sprinkle evenly with half of the cinnamon mixture. Gently turn quesadillas over; place on baking sheet sprayed with cooking spray. Brush with remaining butter, then sprinkle with remaining cinnamon mixture.
- Bake 15 min. or until quesadillas are lightly browned and cheese is melted. Serve warm topped with COOL WHIP.
