Sweet Onion, Turkey and Chermoula Mayo Sandwiches image

Warm Moroccan spices add spice to turkey sandwiches. Make the Chermoula Mayonnaise while the onions are caramelizing.

1 Tbsp olive oil, extra virgin
2 large sweet onions, sliced thinly lengthwise
8 slice turkey, white and dark
4 soft hoagie rolls
4 butter lettuce leaves
chermoula mayonnaise
2 medium tomatoes, sliced thinly

Steps:

  • 1. Heat olive oil in large skillet over medium high heat
  • 2. Add onions and cook for 5 minutes. Turn down heat to medium low.
  • 3. Cook, stirring occasionally, until onions are golden brown, about 45 minutes total. Season to taste with salt and pepper.
  • 4. Season to taste with salt and pepper.
  • 5. Layer turkey on bottoms of rolls. Mound onions over the turkey. Drizzle generously with Chermoula Mayonnaise
  • 6. Add lettuce leaves and tomato slices. Put on sandwich roll top. Serve
