I came up with this salad recipe when I was craving something sweet and sour, but also healthy!

Steps:
- Toss together lettuce, green onions, pineapple chunks, chopped peaches, kalamata olives and toasted walnuts.
- In a seperate bowl, mix together the lite salad dressing ingredients.
- Plate and dress the salad.
- Before serving, sprinkle about 2 Tbls. of reserved pineapple juice over each serving of salad.
- Serve chilled.
