Sweet and Sour Pork image

Years ago, I took several Chinese cooking classes. This was one of the recipes I got from the class and it was a family favorite. You can choose a light batter or a heavier batter. Number Of Ingredients 30

1/2 lb pork tenderloin, or 2 lean pork chops, cut into small cubes
2 Tbsp sherry
1 tsp salt
COATING #1: (LIGHT COATING)
1 egg, beaten
flour
COATING #2: (HEAVIER COATING)
1 egg, beaten
1/2 c flour
1/2 c water
1/4 tsp salt
SAUCE:
1 clove garlic, minced
1 Tbsp oil
1 c vegetables (see the options below)
1/2 c sugar or honey
1/2 c white vinegar
3/4 c chicken stock
2 Tbsp soy sauce
1 1/2 Tbsp cornstarch
1/4 c water
oil, for deep frying
VEGETABLES: (EACH ARE OPTIONAL, PICK ANY OF INTEREST)
carrots, diced
onions, wedges
bamboo shoots
green bell pepper, diced
pineapple chunks
celery, diced
mushrooms, whole, or halved if larger

Steps:

  • 1. Marinate pork in sherry and salt for 15 to 30 minutes. Remove pork from the marinade.
  • 2. If using coating #1: dip the pork in the egg, then the flour.
  • 3. If using coating #2: dip the pork into the batter.
  • 4. Deep-fry until golden brown; drain.
  • 5. Heat 1 tablespoon oil in wok.
  • 6. Brown garlic.
  • 7. Add vegetables and stir-fry 2-3 minutes (depending upon which vegetables you chose).
  • 8. Add honey (or sugar), vinegar, stock and soy sauce.
  • 9. Bring to a boil.
  • 10. Combine cornstarch with water; add to sauce, stirring until thickened.
  • 11. Add pork and cook just enough to heat through.
  • 12. Serves 2 as a main course, or up to 6 as a side dish.
