Swedish Spice Cookies image

These soft and chewy cookies have a distinctive orange flavor; they are good for snacks or even for a breakfast on the go!

2 c sifted all-purpose flour
1/2 c cane sugar
1/2 tsp baking soda
1/2 c light corn syrup
1/2 c unsalted butter
1 tsp ground cardamom
1/4 tsp ground ginger
1/4 tsp ground cloves
2 tsp orange zest
1 egg

Steps:

  • 1. Preheat oven to 350 degrees F. Sift the Flour together with the sugar and baking soda.
  • 2. Combine the corn syrup, butter, spices and orange zest in a small saucepan; heat, just until the mixture boils and the butter melts. Remove from the heat and cool.
  • 3. Whisk the egg in a large bowl; slowly pour the cooled syrup into the egg, mixing well, with a wooden spoon.
  • 4. Stir in the flour mixture all at once; mix until well blended.
  • 5. Drop by teaspoonfuls to form the cookies, 2" apart on greased or parchment lined cookie sheets.
  • 6. Bake 11-13 minutes or until lightly browned. Transfer cookies to cooling racks. When cool, store in a lightly closed container.
