Susan's Summer Squash Salad image

I first tried this salad when I bought it in my supermarket's deli. I liked it so much that I played around with it until I managed to duplicate it. You can use regular dressing or the low-fat or fat-free versions if you like. I like it best with the Sweet Onion (sometimes called Sweet Vidalia Onion) dressing. Just look for it in the salad dressing aisle.

Number Of Ingredients 8

1 cup(s) diced zucchini
1 cup(s) diced yellow squash
1 cup(s) diced red bell pepper
1/2 cup(s) diced red onion
1/4 cup(s) sliced green onion with tops
1/4-1/2 cup(s) sweet onion salad dressing
1/2 teaspoon(s) dried thyme (or 1 tsp fresh)
1/2 teaspoon(s) dried rosemary (or 1 tsp fresh)

Steps:

  • Chop vegetables into pieces about 1/2 - 3/4 inch. Marinate in the dressing with the herbs. Allow to marinate at least 30 minutes before serving. Even better if marinated longer, about 4-8 hours or overnight.
  • Vary the dressing for different flavors. Italian or Greek are also good. Even fat-free varieties can be used.
  • Vary the sweetness with Stevia, honey, or agave nectar.
