Super Spinach Salad image

I tried a similar salad from Trader Joe's® and fell in love. This is my attempt to recreate it on a regular basis.

2 cups packed fresh spinach
½ cup cooked quinoa
¼ cup shredded carrots
¼ cup dried cranberries
¼ cup canned chickpeas (garbanzo beans)
¼ cup edamame (green soybeans)
2 tablespoons pumpkin seeds
¼ cup ginger-miso dressing, or to taste

Steps:

  • Combine spinach, quinoa, carrots, cranberries, chickpeas, edamame, and pumpkin seeds in a bowl; add dressing and toss to coat.
