Grandma's Banana Bread image

This is the best Banana Bread recipe I have ever used. My grandmother was an excellent cook. It is so moist, one thing that my children loved to do was toast it and put butter on it. We love to have it for breakfast and or desert.

Number Of Ingredients 9

1 3/4 c flour
1/4 tsp baking powder
1/2 tsp baking soda
2/3 c sugar
1/3 c shortening, butter flavor
2 large eggs
1 c bananas (mashed) approx 3
3/4 c pecans, in pieces
1/2 c coconut, shredded

Steps:

  • 1. Preheat oven 350* Lightly grease and flour 2 loaf pans. Makes 2 loaves
  • 2. In mixing bowl, cream shortening and sugar, add in bananas, if adding coconut you may want to add extra bananas or a tbsp of milk. Add eggs and cream together. Slowly add in flour mixture (flour, baking powder, baking soda). Blend all together till well mixed. Stir in pecans and coconut in if wanted. Mix well.
  • 3. Spoon mixture in to loaf pans filling half way. Bake 60-65 minutes where inserting knife comes out clean. Let bread cool 5 minutes then turn out of pan on to rack to continue to cool.
