SUNNY SUMMER SALAD image

5 blood oranges (moro or tarocco are my favorites)
2 ruby red grapefruit
3 avocados
1 can hearts of palm (optional)
1 heads bibb lettuce
Champagne vinaigrette dressing or avocado oil with white pepper to taste.

Steps:

  • Clean blood oranges and grapefruit into individual sections. Remove avocado peel and slice into serving sections. Clean and rinse hearts of palm. Cut into small slices. Clean bibb lettuce and separate leaves. Take your choice - 1. Arrange segments alternating avocado, blood orange and grapefruit into a colorful pinwheel swirl on top of clean bibb lettuce. Sprinkle hearts of palm segments over the fruit fan and at ends of fruit. Drizzle vinagrette or avocado oil over salad. 2. Cut fruit, avocado and heart of palm into small pieces. Mix together in a small bowl. Place salad mix on bibb lettuce. Drizzle vinagrette or avocado oil over fruit. Decorate with tortilla chips and serve. 3. Cut fruit, avocado and hearts of palm into very small pieces. Serve with tortilla chips and enjoy. The versatility of this dish is amazing. Chicken baked in blood orange or lime juice can be placed on the first variation for a fresh summer chicken salad. I never have left overs with this dish and find how ever much is made is gone just as quickly as it's made available.
