A recipe from Southern Living's The Southern Hospitality Cookbook, copyright 1976. I first made this recipe in April 1981 and noted that the results were "Excellent!"

Number Of Ingredients 11

1 cup butter, softened
2 cups all-purpose flour
1/2 cup powdered sugar
1 tablespoon grated fresh lemon rind
4 large eggs
2 cups sugar
6 tablespoons strained lemon juice
1 tablespoon grated fresh lemon rind
1 tablespoon all-purpose flour
1/2 teaspoon baking powder
powdered sugar

Steps:

  • Pastry: Blend ingredients and pat into bottom of a jelly-roll pan.
  • Bake in preheated 325° oven for 15 minutes.
  • Topping: In a mixing bowl, beat eggs lightly with a fork.
  • Add remaining ingredients (except powdered sugar).
  • Mix well and pour on top of baked pastry.
  • Bake in preheated 325° oven for 40 minutes.
  • Remove from oven and sprinkle with powdered sugar.
  • Cool and cut into squares.
