Yield Makes 4 to 6 servings (more if chilis opened)

Steps:
- 1. Using a fairly flat serving dish with a lip lay all of the chilis on the bottom (they can even be split open). 2. Slice the tomatoes, and layer them over the chilis. 3. Slice the onion (thin to medium slices), and layer over the tomatoes. 4. Sprinkle chopped or grated fresh garlic over the top (the more the better or to taste). 5. Sprinkle oregano (bottled or fresh)over the top (again Italians use a fairly heavy hand). 6. Grind a little black pepper over the top (light hand or omit entirely). 7. Pour a very good quality olive oil over the top. 8. Pour a very good quality red wine vinegar over the top. 9. Chill for 10 minutes up to an hour. 10. Serve.
