Sugar Crusted Welsh Lamb image

This dish takes only a few minutes to prepare, so it's an awesome and delicious weeknight dish.

4 - lamb cutlets
2 tablespoon(s) demerara sugar (raw sugar)
1 tablespoon(s) dijon mustard
1 - drizzle of olive oil
1 - baking potato
1 sprig(s) rosemary

Steps:

  • Preheat the broiler to high. Meanwhile, season the lamb with salt and pepper to taste. Sprinkle the sugar on a plate. Spread the mustard on the cutlets and sprinkle with minced rosemary, then roll each cutlet in the sugar.
  • Drizzle a little oil over a non-stick baking sheet or tray. Slice the potato as thinly as you can, using a mandoline if you have one. Pat slices dry on a paper towel, then scatter slices over the baking sheet in a single layer. Drizzle with a little more oil, then season with pepper and scatter with a bit more rosemary.
  • Lay the lamb cutlets on top of the potatoes and broil for 10 minutes, without turning, until the lamb and potatoes are cooked and golden.
