- 1. Preheat oven to 350. In 1tablespoon olive oil,and 2 tablespoons butter,soften onion,and red pepper. Cool.
- 2. Meanwhile butterfly the shrimp, leaving tails on, and place on a baking pan sprayed with cooking spray. Gently mix the rest of the ingredients, including the cooled onion,and peppers,and place about a tablespoon full pressed down on each shrimp.
- 3. Bake for 25 minutes.
