Stuffed Pineapple Hawaiian-Style image

Makes a great presentation piece for your favorite luau.

Number Of Ingredients 10

10 medium shrimp, peeled and deveined
4 ounce(s) honey ham, cubed
1 cup(s) medium grain rice, cooked and cooled (rice should measure 2 cups after cooking)
1 - pineapple, cut in half vertically and pineapple flex cubed and moved to the sides
1 can(s) coconut milk
1 teaspoon(s) paprika
1 teaspoon(s) lemon pepper seasoning
1 teaspoon(s) salt
1 tablespoon(s) oil
1/2 cup(s) strawberries

Steps:

  • Mix peeled, deveined shrimp with oil and seasonings (paprika, lemon pepper, salt) and saute in a skillet until done. Remove from pan and cool.
  • Slice pineapple in half vertically and remove pineapple meat and slice into chunks. Place pineapple chunks to the side.
  • Cook the rice according to pkg. instructions substituting coconut milk for 1 cup of water. Cool rice.
  • Place 1/4 of the ham in bottom of each pineapple half . Lightly cover the ham with cooked rice (1 cup in each pineapple half). Place the pineapple and strawberries over rice in each pineapple half. Place cooked shrimp on top of fruit (in each half) and cover with remaining ham. Place in 350 degree oven for 10 minutes just to warm through.
