Steps:
- Mix hamburger, chopped mushrooms and chopped jalepeno and BBQ Rub to taste
- Cut top and bottom of onion off. Scoop out center of onion forming a bowl.
- Stuff meat mixture into onion
- Wrap outside of onion with 2 slices (or more if onion is really large). Secure with toothpick.
- Sprinkle all over with more rub.
- Place in pellet smoker at 280 to 300 degrees. Cook for 1 hour and 40 minutes until meat looks mostly done.
- Drizzle a few drops of Haute sauce on top on meat. The brush with Slaps BBQ sauce.
- Cook for 30 more minutes then top with grated cheese.
- Cook for 20 more minutes until internal temp is 166 degrees
