MEATLOAF:
4 pounds ground beef
2 tablespoons Worcestershire Sauce
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon paprika
1/4 teaspoon turmeric powder
1/2 teaspoon garlic powder
1/2 cup milk
1 cup oats
2 eggs
STUFFING:
10 ounces frozen chopped spinach, thawed
3 cloves garlic, minced
3 sun dried tomatoes, sliced
1/2 cup marinated peppers, sliced thin
4 ounces mozzarella cheese, shredded
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
GLAZE:
2 tablespoons honey
2 tablespoons Worcestershire Sauce
2 tablespoons ketchup

Steps:

  • MEATLOAF: In a large bowl combine all of the meatloaf ingredients and mix well. STUFFING: On a medium to low heat; heat a medium size frying pan with the olive oil; add the spinach, garlic, sun dried tomatoes, marinated peppers and seasonings. Heat until the garlic is fragrant. Place the prepared ground beef in a baking pan and shape it into a bowl. Place the stuffing inside filling from end to end, finishing with the shredded cheese. Gently, fold the meatloaf mixture over the top to cover the stuffing. GLAZE: Place glaze ingredients in a small bowl and mix. Spoon the glaze over the top of the meatloaf from end to end. Preheat oven 350°F. Bake for 45 to 50 minutes.
