Stuffed Eggs image

I can't take credit for this but I made it one day after I had cooked a Cook's ham and found this in their website. My son took some to work and has had requests for more of the same. I am making more today. You have to like horseradish - they are good.

Number Of Ingredients 10

1/2 cup(s) finely chopped leftover ham
6 - hard cooked eggs
3 tablespoon(s) mayonnaise or salad dressing
1 1/2 teaspoon(s) prepared horseradish
1 teaspoon(s) ground dry mustard
1/2 teaspoon(s) lemon juice
dash(es) salt
dash(es) ground black pepper
- ground red pepper to taste
HAM STUFFED EGGS

Steps:

  • Cut eggs in half lengthwise. Remove yolks to bowl and mash. Add ham, mayonnaise, horseradish, mustard, lemon juice, salt and pepper. Mix well.
  • Spoon egg yolk mixture into whites and sprinkle with red pepper. Refrigerate at least an hour before serving.
  • Amount of servings would depend on how many eggs you cook.
