Steps:
- Preheat oven to 425. Brush sides of squash with 2 tbsp olive oil. Season w/ salt and black pepper. Roast cut side down until tender and carmelized (15-20 min). Make quinoa. (about 15 min) Combine quinoa, onion and chives, feta cheese, 2 tbsp olive oil and vinegar. Season with salt and red pepper flakes. Divide filling among squash.
