Strawberry Yogurt Soft Cookies image

I was looking for a recipe copy of commercially available BearPaws, but couldn't find one. My kids love them, but I wanted something healthier for them, and less expensive. So, I decided to try to recreate it. This recipe could be easily doubled.

Number Of Ingredients 9

1/2 cup Greek yogurt, with honey
1/4 cup finely chopped strawberry
1 egg
1/2 teaspoon vanilla
1/3 cup sugar
3/4 cup ground oatmeal
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon cinnamon

Steps:

  • Chop strawberries (I used my mini food processor).
  • Mix all wet ingredients together.
  • Add the dry and mix until combined. The mixture will be slightly wet.
  • Drop by large spoonful onto parchment lined cookie sheet.
  • Bake at 350 for approx 12 minutes.
  • * If you like a sweeter cookie, or use plain Greek yogurt, you could add more sugar.
  • The texture of this cookie is soft, and muffin-like.
