Kiwi refers to New Zealand origins not to the bird or fruit. Standard North island style burger. Hamburger here means a hot "takeaways" style complete meal in a bun. Usually served alone or with hot chips ( thick french fries ).

6 round hamburger buns
1/2 kg beef mince
1/4 tsp salt
pinch pepper
pinch mixed herbs
1 onion
2 firm tomatoes
6 tsp mayo
6 tsp steak or tomato sauce (ketchup)
100 g grated cheese
6 tsp marge or butter
cooking oil
1/2 iceberg lettuce

Steps:

  • 1. Cut buns crossways in half, toast in oven 100c 10 mins, butter. Slice tomato. Separate lettuce leaves. Peel n slice onion, fry in pan.
  • 2. PATTIES. In bowl combine mince, salt n pepper. Split into 6 even sized balls, using a small plate squash to about 5-7mm thickness, shape to roughly round shape, fry in pan until mince cooked thru.
  • 3. ASSEMBLY. Spread mayo onto top section of bun. Place grated cheese onto bottom, then fried onions, add sauce, then pattie, tomato then lettuce, put top on bun. Optional extras add fried mushrooms and /or slice of beet root and/or sliced gherkin (pickles).
  • 4. VARITATIONS. South Island burger, replace all salad/vege n cheese with coleslaw. Hawaiian, add pineapple ring and slice of ham. Steak burger, add or replace pattie with 200 gm steak, add fried shrooms. Bacon n egg burger, add fried bacon n egg. Chicken burger, replace pattie with fried / grilled chicken breast, replace sauce with plum sauce. Fish burger. replace pattie with fried/grilled fish ideally trevalli or dory, remove onion replace both sauce n mayo with tartare sauce.
