Strawberry-Rhubarb Cake image

Pile on the fruit for our Strawberry-Rhubarb Cake recipe. This Strawberry-Rhubarb Cake combines pound cake and sweet, tender strawberries and rhubarb.

Number Of Ingredients 6

1 lb. fresh rhubarb, cut into 1-inch-thick slices
2 cups halved strawberries
1/3 cup sugar
2 Tbsp. water
1 pkg. (10.75 oz.) frozen prepared pound cake, thawed, cut into 10 slices
1-1/3 cups thawed COOL WHIP Whipped Topping

Steps:

  • Cook rhubarb, strawberries, sugar and water in saucepan on medium heat 5 min. or until rhubarb is desired tenderness, stirring frequently. Cool slightly.
  • Refrigerate 2 hours.
  • Spoon about 1/4 cup rhubarb mixture over each cake slice just before serving; top with 2 Tbsp. COOL WHIP.
