Slow Cooker Irish Potato Soup image

All this hearty soup needs is some crusty bread.

4 cup(s) chicken broth
3 - potatoes, peeled and diced
1 1/2 cup(s) cabbage, chopped
1 - leek, diced
1 - onion, chopped
2 - carrots, diced
1/4 cup(s) fresh parsley, chopped
1 teaspoon(s) salt
1/2 teaspoon(s) freshly ground black pepper
1/2 cup(s) sour cream
1/2 pound(s) bacon, cooked & crumbled (less if you prefer)
1 - bay leaf
1/2 teaspoon(s) caraway seeds

Steps:

  • Combine chicken broth, potatoes, cabbage, leek, onion, carrots and parsley into the base of your slow cooker. Stir in salt, caraway seeds, pepper and bay leaf. Cover, cook on Low 8-10 hours or on High 4-5 hours.
  • Remove and discard bay leaf. Combine some hot liquid from slow cooker with the sour cream in a small bowl. Add mixture to slow cooker; stir. Stir in bacon.
