STONE FIRE GRILL LEMON GARLIC CHICKEN BREASTS image

•4 boneless, skinless chicken breasts
•Salt and pepper to taste
•Lemon Garlic Sauce:
•1/3 cup fresh lemon juice
•3/4 tablespoon kosher salt
•1/2 teaspoon dried oregano
•1/2 teaspoon ground black pepper
•2 tablespoons chopped fresh basil
•1 head fresh garlic, peeled, coarsely chopped
•1/2 cup olive oil, see cook's notes
•Garnish: chopped Italian parsley, about 3 tablespoons
•Garnish: 1 lemon, sliced (seeds removed if present)

Steps:

  • 1. Preheat oven to 350 degrees. Lightly salt and pepper the chicken breasts and place in 9-by-13 baking dish. 2. Combine all sauce ingredients in a medium bowl and pour over chicken breasts. Cover dish with aluminum foil. 3. Bake about 40 minutes (baking times may vary depending on size of chicken breasts). Remove pan from oven and adjust oven rack to about 8 inches below broiler element. Turn on broiler. Remove foil from chicken. Broil until chicken is browned, about 60 seconds. 4. Transfer to serving platter and garnish with chopped Italian parsley and sliced lemon.
