5 lbs russet potatoes, peeled, diced, and boiled until tender
5 stalks celery, chopped
1 medium onion, diced
8 hard-boiled eggs, chopped
4 tablespoons white vinegar
2 tablespoons sugar
3 cups hellmann's mayonnaise
1 1/2 teaspoons salt
1/2 teaspoon pepper

Steps:

  • While potatoes are boiling combine rest of ingredients except eggs together in a small bowl to make the dressing.
  • When potatoes are tender, drain, and put in a large bowl.
  • While potatoes are still warm add dressing mixture and eggs.
  • Refrigerate until cool, garnish with a few sprinkles of paprika if desired, and serve.
