STEAMED CLAMS WITH THAI BASIL AND CHILIS image

1 T oil
4 garlic cloves, chopped
2 t minced serrano chili
1/3 c white wine
1 T fish sauce
1 t sugar
2 t oyster sauce
1/2 t black pepper
3 # clams
1 c chopped thai basil

Steps:

  • In a large pan saute garlic and chili in oil. Add wine, fish sauce, sugar, oyster sauce, and pepper to pan, bring to a boil. Add clams and cover; cook until clams open about 5- 10 mins. Toss in basil . Serve in bowl with cooking liquid.
