Starfruit (Carambola) Fruit Salad image

Starfruit is very delicious; it is a tart fruit that is kind of like a granny smith apple. The whole fruit is edible, even the thin waxy skin. Leaving the skin on won't affect the flavor or texture (but I do remove the seeds because they are sometimes tough to chew on, and they do affect the taste of the salad). The tarty...

1 - 2 starfruit
7-8 strawberries, diced
1 banana
1 c frozen mango chunks, diced
1 nectarine
1 peach
1 pear
1 Tbsp apricot preserves
a few squirts of lemon juice
1 granola bar, chopped (i used kashi dark chocolate coconut granola bar)

Steps:

  • 1. Gently wash and pat dry your starfruit. Gaze at it for a while because its so beautiful :) Isn't it amazing that this even exists?? There is so much variety of fruit on this planet... Anyway...
  • 2. Using a vegetable peeler, gently peel away browner edges of "stars". Cut off both ends. Set aside.
  • 3. Into bowl, mix the strawberries, mangos and bananas. Give them a few squirts of lemon juice. Mix again.
  • 4. Add nectarine, peach and pear. Mix in the preserves. Mix well to thoroughly incorporate the preserves...but also mix gently so you don't turn your fruit into a mashy mess.
  • 5. Slice the the starfruit thin and arrange on serving plate. (Slice thin because it is tart for some, so a little goes a long way.) As you are slicing, the few seeds inside will be attached to the middle of the star. Remove and discard.
  • 6. Scoop your fruit salad onto the starfruit bed. Top it with some more slices of starfruit, and chopped granola bar. Enjoy!
