Squash chips image

My husband ate most of these by himself, he LOVED them! You can make them with yellow squash or zucchini .

Number Of Ingredients 7

3 or4 medium yellow squash, cut in 1/2 inch rounds
1/4 c cup heaping ,shredded parmesan cheese
1/4 c heaping, panko bread crumbs
1/4 tsp kosher salt
2 tsp olive oil
freshly ground pepper to taste
PREHEAT OVEN TO 400

Steps:

  • 1. Coat squash slices with olive oil.
  • 2. In a bowl, combine Parmesan cheese, panko bread crumbs, salt and pepper.
  • 3. Add squash slices to cheese mixture, I did it one by one, then placed on a Pam sprayed foil lined cookie sheet. Top slices with remaining cheese. Bake 30 minutes, no need to turn, they crisp up on both sides by themselves.
